If you've never tried delicata squash, it's time! This tender, creamy winter squash is easy to cook and deliciously sweet when roasted to caramelized perfection. This simple 4-ingredient recipe is my go-to for incredibly easy roasted delicata squash to be served as a side dish or in other dishes such as salads or pizza. A thin, easy to slice skin makes prep work quick and eating the skin pleasant!

What is Delicata Squash?
The lesser-known delicata squash, also sometimes called sweet potato squash, peanut squash, or Bohemian squash, is a striped, light yellow winter squash that is long and skinny. It is naturally sweet and creamy when cooked, and the skin is much more delicate than other larger winter squash varieties, so it is cut more easily and does not need to be peeled. That means less prep work for you and edible skin that doesn't feel like you're eating cooked cardboard. Delicata squash can be found in the fall and winter, but it tends not be available everywhere, and sometimes is present for a shorter period of time in grocery stores and farmers markets.
Ingredients
- Delicata squash (of course!) - find it near the other winter squash at the grocery store.
- Olive oil -You can also use a high heat-friendly, neutral flavored oil such as avocado oil.
- Maple syrup - Pure maple syrup enhances the natural sweetness of the squash and aids in deliciously caramelized edges.
- Fresh thyme - Thyme is a natural flavor pairing for winter squash.
- Salt and pepper - A generous pinch of kosher salt ensures the most delicious roasted veggies, including squash.

How To Cut Delicata Squash
- Use a sharp knife to slice the squash in half lengthwise.
- Use a spoon to scoop the seeds from each half.
- Slice each half into half-moons about a half inch thick.
How To Roast It
- Toss the sliced squash with oil, maple syrup, thyme leaves, salt and pepper.
- Spread the squash onto a lined baking sheet in a single layer with space in between each slice.
- Roast at 400 degrees for 35-40 minutes, until golden and corners begin to caramelize, flipping squash halfway through.
Hint: Lining your baking sheet with parchment paper or a silicone baking mat makes for easy cleanup!
Substitutions and Variations
- If you don't have fresh thyme, you can use fresh rosemary. You can also use dried thyme or rosemary.
- Honey may be used in place of maple syrup.
Storing Leftovers
Leftover squash can be stored in an airtight container for up to 4 days. Reheat leftovers in the oven at 400°F or in a skillet on the stove over medium heat to revive the caramelized edges.
Leftovers are also delicious in a warm kale salad or on top of a pizza!
Pro Tip
Make sure to use a big enough baking sheet that the squash pieces can be spread in a single layer with space in between. Squash that is too crowded will steam rather than roast, and won't get those deliciously caramelized golden edges.
