Meatball subs often pair tomato sauce with melted cheese, but Buffalo sauce can send the same sandwich in another direction. Here, frozen meatballs cook in Buffalo wing sauce and ranch seasoning before going into sub rolls with ranch dressing, lettuce, blue cheese, and celery salt.

Crumbled blue cheese replaces the mozzarella or Parmesan found on many meatball subs. Its sharp taste works with the Buffalo sauce, while celery salt adds another flavor tied to the vegetables served beside Buffalo wings.
The finished sub still starts with meatballs and bread, but marinara no longer defines it. Buffalo sauce, ranch, lettuce, blue cheese, and celery salt move the sandwich toward Buffalo wings while keeping the meatball sub format intact.
