Green goddess fans, rejoice! It's super easy to make your own healthy version of the pretty green dressing in your own kitchen!

I have to admit, I hadn't tried green goddess dressing until recently, when we got a Panera in our town. Is Panera's Green Goddess Cobb everyone's first taste of green goddess dressing? If not, I think it should be. It sets the bar pretty high, and turned me into a fan immediately. Cool, creamy, and herby, I knew I had to make a version of my own at home.

Lucky for me (and for you) making a healthy version of green goddess dressing is super easy! All you need are a few fresh ingredients and a food processor or blender.

First, what exactly is green goddess dressing, and where did it come from?

It's kind of one of those foods that you just don’t know until you know, you know? Green goddess dressing is a creamy dressing (usually mayo-based, which you all know how I feel about mayo…), with punches of garlic and lots of herbs, which is where the pretty green color comes from. It supposedly originated in California in the 1920's before becoming popular in the '70s and '80s.

Typically, green goddess dressing consists of mayo, garlic, lemon, anchovy, and tons of fresh herbs, including parsley, green onion or chives, tarragon, and/or other herbs.

I added both a healthy and simple spin on green goddess dressing with this avocado Greek yogurt version, which is higher in protein and healthy fats and lower in saturated fat than traditional versions. My healthy green goddess dressing (with no mayo in sight) is made of simple ingredients:

  • Plain Greek yogurt - for healthy creaminess. You can use nonfat or full-fat. Whatever you have on hand.
  • Avocado - more creaminess, fiber, healthy unsaturated fat and an extra pop of green
  • Garlic - because punchy, savory garlic makes everything better
  • Lemon juice - for a nice brightness
  • Fresh herbs - where the majority of that beautiful green comes from. I used a mix of parsley, cilantro, and green onion, but you can experiment with other fresh herbs if you'd like, such as tarragon and chives.
  • No anchovies - because, honestly, anchovies are a pain and you really don't need them here. Also, without them, this dressing is vegetarian.

The dressing is super easy to make. Just blend everything until smooth in a food processor or blender (I use this mini food processor, and it's the best!), adding water as needed to reach the level of thickness that you like.

Now that you have a delicious, healthy green goddess dressing, what do you put it on?

Short answer: everything. This green goddess dressing is delicious on salads, of course (I like to make a copycat of Panera's Green Goddess Cobb), but it’s also lovely spread on sandwiches and wraps, as a dip for fresh veggies (or even fries!), on top of a grain bowl, or mixed into chicken or tuna salad. The limit does not exist…
