    Vegetables About to Go Bad Became the Base for This Brunch

    Vegetables near the end of their fridge life do not have to become scraps. Reddit user u/CharlotteLucasOP had asparagus, chestnut mushrooms, and grape tomatoes close to becoming overripe, so the three became the base for brunch instead.

    The vegetables went into a pan with butter, garlic, and black pepper before two fried eggs, leftover Hollandaise, smoked paprika, and balsamic joined the plate. Half an avocado cut into a flower completed the meal.

    Asparagus, Mushrooms, and Tomatoes Went Into the Pan

    The vegetables needed to be used first, so asparagus, chestnut mushrooms, and grape tomatoes became the starting point. Butter helped brown the mushrooms and asparagus, while the tomatoes softened and released some of their juice into the pan.

    Garlic and black pepper supplied the seasoning without adding another sauce at this stage. Keeping the vegetables together also turned several small amounts of produce into enough food to support the eggs.

    Leftover Hollandaise Gave the Brunch Its Direction

    There was already Hollandaise left from another meal, which helped decide what would go on top of the vegetables. u/CharlotteLucasOP warmed the sauce and paired it with two fried eggs.

    Both eggs kept their yolks runny, adding another rich component once cut open. The Hollandaise sits across the eggs and vegetables rather than being served on the side, so the sauce reaches the asparagus, mushrooms, and tomatoes underneath.

    Smoked Paprika and Balsamic Finished the Eggs

    Smoked paprika covers the surface of the fried eggs, while a balsamic drizzle runs across the eggs and vegetables. Those two additions bring smoke and acidity to a plate built around butter, egg yolk, and Hollandaise.

    The combination also gives the vegetables more than one role. They are not a side next to eggs but the bulk of the brunch, with the eggs and sauce served over them.

    An Avocado Became the Final Addition

    Half an avocado sits beside the cooked vegetables, cut into thin slices and arranged into a flower. It was u/CharlotteLucasOP's first attempt at the shape, and several Reddit commenters singled it out after seeing the finished plate.

    What started as a need to use asparagus, mushrooms, and tomatoes became a full brunch without adding bread, potatoes, or another main ingredient. The vegetables emptied part of the fridge, while two eggs and leftover Hollandaise turned them into the center of the plate.
