You guys. Get ready to have your summer meals on repeat because this strawberry avocado salad is going to Rock. Your. World.
This strawberry grilled chicken salad is my version of the Barbi Salad at a little café in Fort Worth called McKinley's. It is one of my all-time favorites! I'm so glad it's finally strawberry season so I can share it with you! The original one doesn't have avocado, but I added it, because what meal isn't improved by adding avocado?
I know that strawberries usually go with spinach, but just give this strawberry avocado salad with crunchy romaine a chance, and I promise you will be hooked just like I am.
This delicious strawberry avocado salad features crisp romaine lettuce, juicy strawberries, creamy avocado, grilled chicken, and tangy goat cheese topped with sweet and crunchy candied pecans and an easy homemade poppy seed dressing. The combination is to die for, and so refreshing for summer. If you don't want to make the candied pecans, you can toast some plain pecans in the oven, and it will be just as delicious.
You may want to make extra chicken and pecans so they are ready to go when you are craving this strawberry avocado salad with grilled chicken because you will crave it! Just sayin'.
