    I Stopped Using Lettuce in My Citrus Salads and Put This Peppery Green in Instead

    Arugula gives a citrus salad a peppery base that can stand against sweet fruit, salty cheese, and a sharp dressing. Cara Cara oranges bring sweetness and juice, while shaved fennel adds crunch without another leafy green competing for space.

    This version adds quinoa, toasted almonds, avocado, and feta, turning the arugula and orange pairing into a salad that can work as lunch or a side.

    Arugula Changes What the Orange Has to Balance

    Cara Cara oranges have sweet flesh with less of the sharp bite found in some orange varieties. Pairing them with arugula puts that sweetness against a green with a peppery taste.

    Feta adds salt, while avocado adds fat and a soft texture. Each ingredient pushes against the orange in a different direction instead of adding another sweet component.

    Shaved Fennel Adds Crunch Without Another Leafy Green

    Fennel brings a crisp texture between the tender arugula and soft orange segments. Shave it into thin pieces with a mandoline or sharp knife so it can mix through the greens rather than sitting in thick chunks.

    Its anise note also gives the salad another contrast to the orange. Place the shaved fennel straight into the bowl with the arugula once the other ingredients are ready.

    Save the Orange Juice for the Dressing

    Segment the Cara Cara oranges over a bowl or cutting board that can catch the juice. Instead of discarding that liquid, save it for the citrus vinaigrette.

    This keeps the same citrus flavor in both the fruit and dressing. Bottled orange juice can replace it when the segmented fruit does not release enough.

    Quinoa Turns the Salad Into More Than Greens and Fruit

    Cooked quinoa adds grain without covering the arugula, fennel, and orange. It also gives the salad more substance when served as lunch rather than beside another dish.

    Another cooked grain can replace quinoa. Leftover grains work here as long as they have cooled before joining the greens.

    Toast the Almonds Before They Go Into the Bowl

    Toasted almonds add crunch against the avocado and orange. Marcona almonds can also be used when available.

    Prepare the almonds while mixing the dressing, then let them cool before adding them to the salad. Hot nuts can wilt arugula on contact.

    Start With Half the Dressing

    Add about half of the citrus vinaigrette first, then toss the arugula, oranges, fennel, quinoa, almonds, avocado, and feta. Add more dressing after checking how much the ingredients have taken up.

    Starting with the full amount can leave liquid collecting beneath the greens. More can go in; excess dressing cannot come back out once the salad has been tossed.

    Keep the Components Apart Until Serving

    This salad does not hold well once assembled. Orange juice, dressing, avocado, and salt from the feta begin changing the texture of the greens as the salad sits.

    For advance prep, segment the oranges, shave the fennel, and make the dressing, then store each component apart. Combine them with the arugula, quinoa, almonds, avocado, and feta close to serving time.
