Easy Gingerbread Syrup

Apparently I'm just gingerbread crazy lately! Which is no shock to me, really.

Gingerbread is my favorite holiday flavor. While others may wait around all year for pumpkin in the fall or peppermint for Christmas, I am all about gingerbread everything this time of year!

Which is why I decided I needed a homemade gingerbread syrup recipe. The coffee syrups you can buy at the store are often filled with questionable ingredients and waayyy too much sugar for my liking, and it's so easy to make gingerbread syrup at home!

How do you make gingerbread syrup?

Gingerbread syrup is just like any other simple syrup. Water, sweetener and spices are simmered together to form a syrup, then the spices are strained out. Typical simple syrup uses a 1:1 ratio of water to sugar, but I used no refined sugar, just molasses. Since molasses is much sweeter than regular sugar, I used a 3:1 ratio. Increase the water even more if you prefer a less sweet version like I do.

Which molasses should I use?

There are lots of different types of molasses. Look for light, unsulphured molasses for the best flavor. Blackstrap molasses is not the same and will be very bitter, so don't use that.

How do I use gingerbread syrup?

Use this homemade gingerbread syrup to flavor anything and everything your little heart desires! I take a Buddy the Elf approach this time of year and put it on everything to add a little holiday cheer to my day - my morning oatmeal, in my coffee for a homemade gingerbread latte, on some gingerbread waffles, straight out of the bottle… okay that last one isn't true, but it's good enough to do that!

Homemade Gingerbread Syrup

Ingredients

Scale
  • 3 cups water
  • ½ cup molasses
  • 1 tsp grated fresh ginger (or ¼ tsp ground)
  • 1 cinnamon stick (or 1 tsp ground)
  • 1 nutmeg pod (or 1 tsp ground)
  • ½ tsp whole cloves (or ½ tsp ground)
  • ½ tsp allspice berries (or ½ tsp ground)

Instructions

  1. Combine all ingredients in a small saucepan. Bring to a boil.
  2. Reduce heat to low and simmer about 25 minutes.
  3. Let syrup cool, covered, at least 30 minutes. Strain through cheesecloth into a bottle or jar with a lid.
  4. Store in the refrigerator and use to flavor coffee, oatmeal, pancakes, and more!
