The classic wedge salad gets an upgrade with healthier homemade blue cheese dressing. It's the perfect crisp, flavorful salad for warm weather!

Blue cheese is one of those polarizing foods that people either love or hate. I am definitely on #teambluecheese.

I hope you are too because today I'm sharing a recipe for a classic wedge salad - made even more delicious with a healthier homemade blue cheese dressing!  Crisp iceberg lettuce, tomatoes, red onion, cucumber, and just a touch of bacon all complement this dressing beautifully. It's the perfect salad to go with a steak and a glass of red wine for date night!

I'll never forget the time I was at my parent's house and my dad wanted wedge salads with dinner. He gets in moods where he craves something and won't stop talking about it until he gets it. He had been talking about wedge salads all day. so that's what we planned to make with dinner. I figured I'd make things easier on everybody and chop up the lettuce, put it in a bowl, and add the rest to the top. One big salad bowl with no separate plates to clean, no cutting up awkward chunks of lettuce.

Big mistake. My dad informed me that this was NOT, in fact, a wedge salad and he was grumpy for, like, 3 days about it. My bad. Lesson learned: when the man wants a wedge salad, make the real thing. Clunky pieces of lettuce and all.

Here's how to make a classic wedge salad

  • Cut a head of iceberg lettuce into wedges, removing the tough core. You can cut it into 4 or 6, depending on the number of people you need to serve, or your preference.
  • Drizzle a little dressing on the wedges. This will help the toppings stick and not fall all over the place, leaving you with naked wedges.
  • Finely dice the onion, cucumber, and bacon. Half the cherry tomatoes.
  • Sprinkle all the toppings on top of the lettuce. Drizzle with a little more dressing and sprinkle with blue cheese crumbles.

The salad part is less of a recipe and more like guidelines, so if you like nuts or avocado on your wedge, go for it! If you prefer the classic, plain and simple, that's cool too. The most important part is obviously the glorious blue cheese dressing!

Ingredients

Scale
  • 1 head iceberg lettuce
  • ½ cup cherry tomatoes, halved
  • ¼ small red onion, diced
  • ⅓ cucumber, diced
  • 1 strip thick-cut bacon, cooked until crispy and crumbled
  • ¼ cup blue cheese crumbles
  • ½ cup homemade blue cheese dressing

Instructions

  1. To make salad, cut iceberg lettuce into wedges, discarding the core. Arrange on a platter and drizzle with a little bit of dressing.
  2. Top with tomatoes, onion, cucumber, and bacon. Drizzle with a little more dressing and sprinkle with blue cheese crumbles.
  3. Serve immediately.

    The plain Siggi's yogurt...is this the fat free one?

    This wedge is right up my alley! I'm all about a good blue cheese dressing, and this looks sooo tasty! Definitely the perfect side salad to any meal!
