Wedge Salad with Homemade Blue Cheese Dressing

The classic wedge salad gets an upgrade with healthier homemade blue cheese dressing. It's the perfect crisp, flavorful salad for warm weather! 

Ingredients

  • 1 head iceberg lettuce
  • 1/2 cup cherry tomatoes, halved
  • 1/4 small red onion, diced
  • 1/3 cucumber, diced
  • 1 strip thick-cut bacon, cooked until crispy and crumbled
  • 1/4 cup blue cheese crumbles
  • 1/2 cup homemade blue cheese dressing

Instructions

  1. To make salad, cut iceberg lettuce into wedges, discarding the core. Arrange on a platter and drizzle with a little bit of dressing.
  2. Top with tomatoes, onion, cucumber, and bacon. Drizzle with a little more dressing and sprinkle with blue cheese crumbles.
  3. Serve immediately.
