Don't throw out that excess bacon fat after cooking bacon - use it to make a flavorful salad dressing! In our house, we always drain excess bacon grease from the skillet into a jar to save in the refrigerator for several applications, from roasting veggies to seasoning the cast iron skillet to this delicious dressing!

Why You'll Love This Dressing

This dressing is perfect for using up excess bacon fat, and it will instantly make your salads irresistible! I love a warm salad, made by pouring a warm dressing over tender greens like spinach that just barely wilt into delicious perfection. The simple ingredients pack a big flavor punch, so you don't need many of them for a super tasty dressing - just bacon grease, shallot, apple cider vinegar, maple syrup, and olive oil.

How To Make Warm Bacon Shallot Dressing

  1. If your bacon grease has cooled, warm it back up either on the stove or in the microwave for  about 15-20 seconds.
  2. Mince the shallot.
  3. In a jar, add the warmed bacon grease, shallot, apple cider vinegar, maple syrup, olive oil, salt and pepper. Whisk or shake to combine.
  4. Use immediately on your favorite salad. If the dressing separates, stir or shake just before using.

Tips & Storage Recommendations

  • I use 3 pieces of thick cut bacon to yield enough grease for the dressing. If you don't have quite enough, you can add a little extra olive oil.
  • If you don't save your bacon grease each time you cook bacon, it's time to start! It makes it super easy to whip up a dressing like this in no time at all. Drain excess grease into a glass jar with a lid and store in the refrigerator.
  • Store dressing in an airtight jar or other container in the refrigerator for up to 5 days. The bacon grease will solidify in the refrigerator. Simply heat it back up in the microwave for about 30 seconds or gently on the stove when you're ready to use it.
