Buying the same coffee beans used at your favorite coffee shop seems like the obvious route to matching its espresso at home. Grind them fine, pull a shot, and the flavor should come close.
Yet the result can taste more bitter, acidic, or thin even when the beans match. Espresso depends on more than the coffee going into the portafilter. Pressure, water temperature, grind, extraction time, and how water moves through the grounds can change what ends up in the cup.

The espresso machine controls several of those factors, which helps explain why matching the beans doesn't always match the shot.
Espresso Needs About 9 Bars of Pressure
Espresso is made by forcing hot water through finely ground coffee at about 9 bars of pressure. That combination extracts a concentrated shot with the texture and strong flavor associated with espresso.
Small changes can throw off the result. Water moving through the coffee too fast can leave the shot thin or sour, while excess extraction can bring out bitter notes.
Water Needs to Reach the Grounds Evenly
Pressure isn't the only difference between machines. Water also needs to spread across the coffee bed rather than passing through some sections more than others.
A well-designed spray head helps distribute water across the grounds. Uneven distribution can over-extract coffee in one area while leaving another area under-extracted, producing competing bitter, sour, or weak flavors in the same shot.
Coffee Shop Machines Give Baristas More Control
Professional espresso machines provide tighter control over water temperature, pressure, extraction time, water flow, and other parts of the brewing process.
They also need to repeat those conditions across shot after shot. Better flow meters, temperature control, and internal components help keep each extraction close to the settings chosen by the barista.
Grinder Choice Changes the Shot Too
A capable espresso machine still needs coffee grounds with the right size and consistency. Espresso uses a fine grind, and small changes in grind size affect how fast water passes through the coffee.
Coffee shops often pair their espresso machines with separate burr grinders rather than relying on a grinder built into the machine. That lets the grind be adjusted as part of dialing in each shot.
Better Beans Can't Fix an Uneven Extraction
Good coffee beans still matter, but buying the same bag as a coffee shop only recreates one part of its espresso setup. The machine, grinder, settings, and person making the shot all affect extraction.
Before switching beans because homemade espresso tastes bitter, sour, or watery, look at the grind and extraction first. The difference between your kitchen and the coffee shop may have less to do with what's in the bag than what happens after the beans leave it.
