    This Watermelon Salad Started Replacing Heavy Summer Lunches

    Want a summer salad that does more than sit beside the main course? This version combines watermelon, arugula, quinoa, feta, almonds, and fresh mint into a bowl substantial enough for lunch while still tasting fresh on the hottest days of the year.

    The combination looks unusual at first. Watermelon often ends up on fruit trays, while quinoa belongs in grain bowls and feta shows up in Mediterranean salads. Once everything lands in the same bowl, however, the contrast of sweet, salty, crunchy, creamy, and peppery flavors explains why this salad keeps returning throughout watermelon season.

    Watermelon Became More Than A Snack

    Most people eat watermelon by itself.

    This salad gives the fruit a larger role. Its sweetness balances the peppery bite of arugula and the salty feta, creating a combination that feels more complete than watermelon alone.

    The juicy texture also helps make every bite feel refreshing.
