    This Buttery Lemon Pie Is The Dessert You'll Make All Summer Long

    The biggest difference happens underneath. Crushed shortbread cookies bake into a crisp base with a buttery texture that stands up to the creamy filling while adding more richness than a traditional graham cracker crust.

    The Filling Needs Only Four Main Ingredients

    While many lemon desserts rely on long ingredient lists, this filling comes together with condensed milk, egg yolks, lemon juice, and lemon zest. After a quick whisk, it pours straight into the prepared crust before baking for about 15 minutes.

    Once chilled for several hours, the filling becomes firm enough to slice while keeping the smooth texture that defines classic lemon pie.

    Fresh Lemon Keeps the Flavor Bright

    Many bakers still prefer fresh lemon juice and zest because they give the filling a cleaner citrus flavor. Meyer lemons can create a sweeter version, while bottled juice remains an option when fresh lemons are unavailable.

    Whipped cream and extra lemon zest finish the pie without covering its sharp citrus flavor, letting the filling remain the centerpiece.

    One Cookie Swap Gives a Classic Pie a Different Finish

    The recipe proves that changing one component can reshape a familiar dessert. Instead of rebuilding the filling or adding extra toppings, the shortbread crust gives lemon pie a richer foundation while keeping the preparation almost identical.

    For bakers looking to refresh a classic dessert without making it more complicated, replacing graham crackers with shortbread has started becoming one of the simplest upgrades.
