So far through my pregnancy, I haven’t had many cravings, but throughout the first trimester, I craved a lot of potatoes. I love baked potatoes and roasted potatoes, and the bland, starchy, savory bite of potatoes just sounded good most of the time to me.
When Thanksgiving rolled around, I was unsure of how many potatoes to peel for the mashed potatoes. I’m used to cooking for the two of us, so I asked Mr. Table how many potatoes he thought I should cook for dinner for 10. His answer? 2 potatoes per person. (These were fairly large Russet potatoes.) So I kept peeling. Needless to say, we had a ton of mashed potatoes left after our Thanksgiving dinner.
I don’t know about you, but reheated mashed potatoes are just not all that appealing to me. It’s one of the few foods that I don’t particularly care for as leftovers. So I decided to get creative with my leftover mashed potatoes.
I came up with these yummy loaded mashed potato bites. I mean, who doesn’t love loaded potatoes? They’re just so cute and convenient in little baked bites with a dollop of Greek yogurt (or sour cream) for dipping!
I made my loaded mashed potato bites a bit healthier with Greek yogurt instead of sour cream, and just enough bacon for flavor without making them bacon bombs. (Which, by the way, is cool if you want bacon bombs. I suggest wrapping them in bacon if that’s the case. Your husband will probably love them even more that way.) They cook up nice and crispy on the outside with smooth, creamy interiors that taste just like a loaded baked potato.
I think loaded mashed potato bites make the perfect appetizer for your New Years or for football watching. But they would also make a great potato side dish if you’re feeling creative for dinner. Or, you know, if you’re a pregnant lady and just want some potatoes.

Ingredients
- Oil spray*
- 2 large eggs
- 1/2 cup nonfat plain Greek yogurt (or light sour cream)
- 2 cups prepared mashed potatoes
- Sea salt to taste (depending on how salted the potatoes are)
- 1/2 tsp freshly cracked black pepper
- 1/3 cup chives or green onions, chopped
- 3/4 cup cheddar cheese, freshly grated and divided
- 1/4 cup cooked bacon, crumbled
- For serving or topping: Nonfat plain Greek yogurt or sour cream, chopped chives
Instructions
- Heat oven to 400°F. Generously spray a mini muffin tin with oil.
- In a large bowl, whisk together eggs and yogurt. Stir in potatoes, salt, pepper, green onions, 1/2 cup of the cheese, and bacon.
- Use a mini cookie scoop or spoon to scoop potato mixture into prepared muffin tin. Sprinkle tops with remaining cheese.
- Bake 15-20 minutes. Remove from oven and cool slightly before gently removing from pan.
- Top bites with a dollop of Greek yogurt or light sour cream and chives, or serve on the side for dipping.
