Apple Pie Overnight Oats

I've been on a huge oatmeal kick for a few years now. Is it weird that oatmeal might be one of my favorite foods? No matter if I make a steamy bowl of steel cut oats in the morning or make it ahead of time, like with these overnight oats, it's always a great start to my day! Taking 5 minutes to whip up some healthy apple pie overnight oats before bed is just one thing you can check off of your to-do list ahead of time. You won't have to wake up early to fix breakfast or worry about rushing out the door hungry.

For busy mornings, having a healthy breakfast made ahead is key. You'll love this apple pie version because they're:

  • Easy to make with only a handful of simple ingredients, and 5 minutes of active prep time.
  • Healthy. These oats have everything you need in a balanced breakfast - protein, complex carbs for a steady stream of energy, healthy fat, and a serving of fruit! They're also low in sugar.
  • Delicious! Full of warm fall spices and grated apple, these oats taste like apple pie, but healthy and easy!

How To Make Apple Pie Overnight Oats

  1. Use a large hole grater to grate the apple.
  2. Whisk the yogurt, milk, cinnamon, nutmeg, maple syrup and chia seeds in a mason jar or other container with a lid.
  3. Add the oats and grated apple. Stir to combine.
  4. Cover and refrigerate overnight, or for at least 6 hours.
  5. Give it a stir in the morning and enjoy warm or cold!

Tips & Ingredient Substitutions

  • Use certified gluten-free oats if necessary.
  • If you don't have chia seeds, you can use ground flaxseed or just omit them.
  • For sweeter oatmeal, increase the maple syrup to 2 or 3 teaspoons.
  • If you prefer a hot breakfast, you can heat these up in the microwave for 30-60 seconds.

How Long Do Overnight Oats Last In The Refrigerator?

Overnight oats will last a good 2-3 days (or more!) in the refrigerator, so feel free to make a few servings at once.

Ingredients

Scale
  • 1 small apple or ½ large apple
  • ¼ cup plain Greek yogurt
  • ¾ cup milk of choice
  • 1 tbsp chia seeds
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp maple syrup
  • ½ cup rolled oats

Instructions

  1. Cut apple in half and remove the core. Grate with a large-holed cheese grater.
  2. Add yogurt, milk, chia seeds, cinnamon, nutmeg, and maple syrup to a mason jar or other container with a lid and stir to combine.
  3. Add oats and grated apple and stir.
  4. Place lid on container and refrigerate overnight or at least 6 hours.
  5. Enjoy cold or warm in the morning.

Notes

  • Use certified gluten-free oats, if necessary.
  • This recipe is easily doubled and will store well in the refrigerator for 2-3 days.
  • To heat overnight oats, place in a microwave-safe bowl and heat for 30-60 seconds.

    Had the consistency of normal porridge with mouldy prices of apple. Cinnamon slightly overbearing but that may have been my fault. Tried hot and cold but still made me gip. Would not recommend. Will stick to granola and yoghurt thankyou very much!
