Vegan Apple Sage Farro Salad

Celebrate fall with this plant based apple sage farro salad made with apples, hazelnuts, sage, and whole grain farro. It's a nutritious, meal prep friendly vegan side dish or lunch perfect for fall! (vegan, dairy-free)

Ingredients

  • 2 cups cooked farro
  • 1 apple, cored and diced
  • 2 stalks celery, with leaves
  • 8-10 fresh sage leaves
  • 1/4 cup hazelnuts
  • Maple Dijon Vinaigrette

Instructions

  1. Cook farro according to package directions and let cool. While farro is cooking, dice apple and slice celery. Roughly chop the celery leaves. Thinly slice sage. In a small pan on the stovetop, lightly toast hazelnuts over low heat until just browned and fragrant.
  2. In a large bowl, combine cooled farro, apples, celery, celery leaves, sage and hazelnuts.
  3. In a small bowl, whisk together dressing ingredients. Pour over farro mixture and toss to coat (I usually start with half and add more as needed). Serve immediately or refrigerate until ready to serve. Store leftovers in an airtight container in the refrigerator.

Notes

For even more flavor, cook farro with vegetable stock instead of water.
