Broccolini Superfood Crunch Salad

This fresh, crunchy superfood broccolini salad with blueberries and almonds is a delicious, antioxidant-packed side dish that is perfect for all of your summer meals! (vegetarian, gluten-free)

Ingredients

  • 2 small bunches broccolini
  • 1/2 cup blueberries
  • 1/4 cup red onion, diced
  • 1/3 cup dried cherries
  • 1/4 cup almonds
  • 1/4 cup Orange Poppy Seed Dressing (more or less to taste)

Instructions

  1. Whisk dressing ingredient together to make the dressing.
  2. Toast almonds in a dry skillet over medium heat on the stove until golden, about 5 minutes, stirring often. Let the almonds cool and chop them roughly.
  3. Chop broccolini into 1-inch pieces. Add to a large bowl.
  4. Add blueberries, onions, cherries, and chopped almonds. Drizzle with dressing and gently stir to coat. Refrigerate, covered, until ready to serve.

Notes

  • Be sure to trim any woody ends of the broccolini that are too tough. 
  • Dried cranberries can be used in place of cherries.
  • If you don't want to make the orange poppy seed dressing, you can use any creamy poppy seed dressing or a sweet vinaigrette.
  • This salad is best served the day it is made.
