Strawberry Avocado Quinoa Salad

This Strawberry Avocado Quinoa Salad is a delicious, wholesome dish that uses the best of summer strawberries in a satisfying, vegetarian lunch or a fresh, whole grain side dish! (vegetarian, vegan option)

Ingredients

  • 1 cup uncooked quinoa
  • 2 cups water or vegetable stock
  • 1/2 lb California Strawberries, hulled and sliced
  • 1 ripe avocado, diced
  • 1/2 cup fresh basil leaves
  • 2 oz goat cheese, crumbled*
  • 2 tbsp blush wine vinegar (or red wine vinegar)
  • 2 tbsp olive oil
  • 1/2 tbsp honey
  • Pinch sea salt
  • Pinch freshly cracked black pepper

Instructions

  1. Add quinoa and water or stock to a medium saucepan. Bring to a boil, cover, then lower heat and simmer 15 minutes. Remove from heat and let quinoa cool completely.
  2. Add cooled quinoa to a large bowl with sliced California Strawberries, diced avocado, basil leaves, and crumbled goat cheese.
  3. In a small bowl, whish together remaining ingredients (vinegar through pepper). Pour over quinoa salad. Gently toss to coat. Serve or refrigerate until ready to serve.

Notes

*omit goat cheese for vegan
