Slow Roasted Chili Blood Orange Salmon

Slow roasted chili blood orange salmon is a flavorful, healthy, easy salmon recipe that is ready in  less than 30 minutes with just 4 simple ingredients! (gluten-free, dairy-free)

Ingredients

  • 1 lb salmon filet
  • Kosher salt
  • Black pepper
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 small blood orange
  • 1 small navel orange

Instructions

  1. Heat oven to 275°F.
  2. Pat salmon dry with paper towels and place on a baking sheet lined with parchment or a silicone baking mat. Sprinkle liberally with salt and pepper. Drizzle with olive oil. Sprinkle with chili powder and rub all over the top of the salmon.
  3. Thinly slice the oranges. Layer oranges tightly on top of the seasoned salmon.
  4. Bake 275 for 15-20 minutes. You may need more or less time depending on the thickness of the fish. Salmon is done when it flakes easily.

Notes

  • I love using blood oranges in this salmon, but you can use any variety of oranges you like!
  • For a spicier version, use chipotle powder in place of chili powder.
  • This recipe is also delicious slow smoked on a pellet grill at 275°F.
