Slow Cooker Pork Loin with Peach Sauce

Super tender pork loin made in the slow cooker with a delicious and super flavorful peach sauce. 

Ingredients

  • 1 pound pork loin 
  • 1 white onion 
  • 1 red onion 
  • 2 garlic cloves
  • 4 peaches
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon fennel seeds
  • 2 cups beef stock
  • 2 cups white wine
  • 2 teaspoons olive oil
  • A bunch of fresh herbs: thyme, basil, sage…

Instructions

  • Peel and cut thinly the onions. Set aside. 
  • Halve the peaches and remove the stones. Cut in chunks. 
  • In the slow cooker add the onions, the pork loin on top, and the peaches surrounding the pork loin. 
  • Add the beef stock and 1 cup of white wine to the slow cooker. 
  • Add the salt, pepper, and fennel seeds. 
  • Set the temperature and cook. for 2 hours on high, and 3 on low. Cover with the lid.
  • Once it’s cooked, remove the pork loin, peaches, and onions and set it aside. 
  • Thinly slice the garlic cloves. 
  • Process the cooked peaches with a food processor or an immersion blender until a fine puree is achieved. Set aside.
  • In a pan add the olive oil and infuse it with the garlic cloves on low until golden and fragrant. 
  • Add the cooked onion to the pan and gently fry for 10 minutes on medium heat. 
  • Add the remaining white wine to the pan and the peach puree. 
  • Add the fresh herbs and the pork loin and let simmer for 10 minutes on low heat. 
  • Serve the pork loin sliced with the peach sauce on top. 

Notes

This could be served with a side of white rice or fried potatoes. 

The meat is very tender and juicy and the flavors are very fresh and fragrant. 

It can be stored in the fridge for up to 5 days in a sealed container.
