No Bake Banana Bread Balls

These delicious no-bake banana bread balls are a healthy, easy, make-ahead snack that is made with nutritious ingredients and no added sugar. They’re perfect for pregnant and nursing moms, kids, and toddlers!

Ingredients

  • 1 medium brown banana
  • 3/4 cup rolled oats
  • 1/2 cup almond flour
  • 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp salt
  • 1/4 cup walnuts, chopped

Instructions

  1. In a food processor, combine all ingredients except for walnuts and pulse until a semi-smooth dough forms. Stop to scrape down the sides, if necessary.
  2. Add the walnuts and process until they are just mixed in.
  3. Using a small cookie scoop or a tablespoon, scoop the dough out. Roll into balls.
  4. Place in an air-tight container and store in the refrigerator for up to 5 days.

Notes

  • You may have to stop to scrape down the sides of the food processor one or two times with a spatula during blending.
  • Wet our hands or coat them with a little bit of oil before rolling the dough into balls to prevent it from sticking to your hands.
  • I think these taste best after sitting in the refrigerator for at least a few hours.
  • If you don't have almond flour, you can use more oats instead.
  • To add more protein, feel free to add a scoop of your favorite protein powder. I like to use collagen peptide powder because it's flavorless.
  • Leave out the walnuts if you'd like, or substitute pecans!
