Healthy Monster Cookie Dough Snack Balls

These 6-ingredient no-bake monster cookie dough balls taste just like the peanut butter, oatmeal and m&m cookie dough you love! You'd never guess that they're actually a healthy snack made with chickpeas and just a hint of honey. (gluten-free)

Ingredients

  • 1/2 cup canned chickpeas + 1 tablespoon of the liquid
  • 2 tablespoons honey
  • 1/4 cup natural creamy peanut butter
  • 1 teaspoon vanilla
  • 3/4 cup rolled oats
  • 1/4 tsp salt
  • 2 tablespoons mini chocolate chips
  • 2 tablespoons mini m&ms

Instructions

  1. In a food processor (I love this mini one!), pulse the chickpeas and liquid, honey peanut butter and vanilla until smooth.
  2. Add the oats and pulse until oats are mixed in. You still want a little bit of texture.
  3. Stir in chocolate chips and m&ms.
  4. Use a small cookie scoop or tablespoon to scoop into 1-inch balls. Roll between your hands to smooth out. It helps to wet your hands or lightly oil them to prevent the dough from sticking. Place them on a small baking sheet or directly in a storage container.
  5. Refrigerate to let the balls firm up a little bit, and to let the flavors blend, before eating.

Notes

  • Store cookie dough balls in the refrigerator in an airtight container for up to 4 days.
  • Cookie dough balls can be frozen for up to 3 months.
