Healthy Monster Cookie Dough Snack Balls
These 6-ingredient no-bake monster cookie dough balls taste just like the peanut butter, oatmeal and m&m cookie dough you love! You'd never guess that they're actually a healthy snack made with chickpeas and just a hint of honey. (gluten-free)

- 1/2 cup canned chickpeas + 1 tablespoon of the liquid
- 2 tablespoons honey
- 1/4 cup natural creamy peanut butter
- 1 teaspoon vanilla
- 3/4 cup rolled oats
- 1/4 tsp salt
- 2 tablespoons mini chocolate chips
- 2 tablespoons mini m&ms
- In a food processor (I love this mini one!), pulse the chickpeas and liquid, honey peanut butter and vanilla until smooth.
- Add the oats and pulse until oats are mixed in. You still want a little bit of texture.
- Stir in chocolate chips and m&ms.
- Use a small cookie scoop or tablespoon to scoop into 1-inch balls. Roll between your hands to smooth out. It helps to wet your hands or lightly oil them to prevent the dough from sticking. Place them on a small baking sheet or directly in a storage container.
- Refrigerate to let the balls firm up a little bit, and to let the flavors blend, before eating.

- Store cookie dough balls in the refrigerator in an airtight container for up to 4 days.
- Cookie dough balls can be frozen for up to 3 months.
