- Method: baked
- Cuisine: Mediterranean
- 2 cups raw cashews
- 2 tbsp tahini
- 2 tbsp pure maple syrup
- 2 tsp sesame seeds
- Coarse sea salt
- Heat oven to 350°F. Line a baking sheet with parchment paper.
- In a large bowl, stir together cashews, tahini and maple syrup. Spread on baking sheet in close together in one large clump in a single layer. This will help it to stick into clusters instead of just single cashews. Sprinkle with sesame seeds and sea salt.
- Bake 20-25 min, or until golden but not burned.
- Remove from oven and let cool completely before breaking into clusters.
- Store in an airtight container at room temperature.
Notes
- Don't use salted, roasted cashews. They'll be too salty and burn more easily. Go plain and raw.
- Make sure the cashews are in a single layer but tightly packed (you don't want to see white space underneath). This will help them stick together into beautiful clusters.
- Watch carefully so you don't burn the cashews. You want them toasty but not too brown. They won't look crunchy when you pull them from the oven, but they'll firm up as they cool. Wait until the cashews are completely cool before breaking them up.
