Healthy Banana Nut Bread

This deliciously moist, healthy banana nut bread made with greek yogurt and whole wheat flour, is is easy to make with just one bowl and one pan, and will make your house smell amazing as it bakes!

Ingredients

  • 3 medium bananas, mashed
  • 2/3 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup nonfat plain greek yogurt
  • 1/4 cup vegetable or avocado oil
  • 1 1/4 cups white whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp fine sea salt
  • 1/2 cup coarsely chopped walnuts
  • raw sugar or sparkling sugar, for sprinkling on top (optional)

Instructions

  1. Preheat oven to 325° F. Grease a 9 x 5" loaf pan or line with parchment.
  2. In a large bowl, mash bananas, then whisk in sugar, eggs, vanilla, yogurt, and oil. Mix until well combined.
  3. Stir in flour, baking soda, cinnamon, nutmeg, and salt. Mix until just combined. Gently stir in walnuts.
  4. Pour batter into greased pan. Sprinkle the top with raw sugar. Bake 50-60 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool in the pan for 10 minutes before removing to a cooling rack.

Notes

  • The more ripe the bananas, the better. You can also use frozen and thawed brown bananas for super moist banana bread. I actually like to keep brown bananas in the freezer for this purpose.
  • Try not to over-mix after adding the dry ingredients. You want the flour to just disappear.
  • Use a metal loaf pan for the most even baking. Ceramic or glass ones tend to take longer to bake.
  • If you don't like nuts, leave them out. You can substitute chocolate chips if you'd like!
