Healthy Apple Cinnamon Oat Pancakes

For chilly fall mornings, there's nothing better than healthy apple cinnamon oat pancakes topped with warm apple cinnamon topping. Full of fresh apples, whole grain oats and warm cinnamon, these easy apple pancakes are simply delicious! (dairy-free, no added sugar, gluten-free option)

Ingredients

  • 1 cup rolled oats
  • 1/2 cup white whole wheat flour (or your favorite gluten-free cup for cup flour)
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 large egg
  • 1 1/4 cups seltzer or soda water
  • 1 tsp vanilla
  • 1 small apple, grated (about 1 cup)

For apple topping:

  • 1 tsp coconut oil or neutral flavored oil
  • 1 small apple, diced
  • 1/2 tsp ground cinnamon
  • 1 tbsp water (or as needed)
  • 1-2 tbsp maple syrup (optional)

Instructions

  1. Heat a large skillet or griddle to 325° F or medium low heat. Lightly grease with coconut oil or cooking spray, if necessary.
  2. Mix dry ingredients in a large bowl.
  3. Add egg, soda or milk, and vanilla to dry ingredients and mix until just combined.
  4. Gently stir in grated apple.
  5. Pour 1/4 c batter for each pancake onto preheated skillet or griddle. Cook until bubbles form in the top and the bottom is slightly browned. Flip and continue to cook until done.
  6. Repeat with remaining batter.
  7. To make apple topping, heat coconut oil in a saucepan over low heat. Add remaining ingredients and cook, stirring occasionally, until apples are soft, about 10 minutes. Add more water if needed to keep the apples from sticking.
  8. Serve pancakes with apple topping and/or maple syrup.
