Caramelized Onion Brussels Sprout Pizza
This delicious vegetarian pizza with brussels sprouts, caramelized onion and hot honey is a fun new recipe to try for pizza night!

- 1 pizza dough or crust
- 1 tbsp + 1 tsp olive oil, divided
- 1 small red onion, thinly sliced
- 1 tsp balsamic vinegar
- 1 cup brussels sprouts
- Salt
- Pepper
- 2/3 cup mozzarella cheese
- 1-2 tsp hot honey (optional, recipe follows)
For hot honey:
- 1/4 cup honey
- 1/4 tsp chili flakes
- Place a pizza stone in the oven to preheat. Heat oven to 500°F.
- Heat 1 tbsp of the oil in a small skillet. Add sliced onion and cook over low heat, stirring, until onions are caramelized, about 10-15 minutes. Add vinegar to onions and stir to coat. Remove onions from the skillet and set aside.
- Trim woody ends from brussels sprouts and slice from top to bottom. Add remaining 1 tsp oil to the skillet and cook brussels sprouts over medium heat for about 5 minutes. Season with salt and pepper.
- Build the pizza. Stretch or roll pizza dough into a circle on a piece of parchment paper.
- Spread caramelized onions evenly over the dough. Top with half of the mozzarella, then the brussels sprouts, then the remaining mozzarella.
- Carefully slice the parchment onto the preheated pizza stone and bake pizza for 8-10 minutes, or until cheese is bubbly and crust is golden.
- Remove pizza from the oven and drizzle with hot honey just before serving.
To make the hot honey:
- Add honey and chili flakes to a small saucepan.
- Heat over low heat until just barely simmering, then remove from heat.
- Store honey in an airtight container at room temperature.
Notes
- If you don't have a pizza stone, you can use a baking sheet.
- I like to use fresh whole milk mozzarella (sold in a ball), but shredded mozzarella also works.
- I like to use my whole wheat pizza dough or sourdough pizza dough recipe for the crust. You can also use a pre-made crust if you like.
