Chewy Flourless Chocolate Pecan Cookies

Chewy flourless chocolate pecan cookies with flaky outsides and dense, fudgy insides are the most delicious, easy, and naturally gluten-free cookie recipe you’ll ever make! (gluten-free, dairy-free)

Ingredients

  • 1 1/2 cups powdered sugar
  • 1/3 cup unsweetened Dutch processed cocoa powder
  • 1/2 tsp instant coffee granules or espresso powder (optional)
  • pinch of salt
  • 1/4 cup egg whites (from 2-3 large eggs)
  • 1 teaspoons vanilla extract
  • 1/2 cup dark chocolate chips
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 350° F.
  2. In a large bowl, whisk together powdered sugar, cocoa, coffee, and salt. Stir in egg whites and vanilla. It may be hard to stir at first, but keep stirring until you get a smooth consistency.
  3. Stir in chocolate chips and pecans.
  4. Using a small cookie scoop, scoop cookies onto a baking sheet lined with a silicone baking mat. Bake for 10-12 minutes. Allow to cool for 10 minutes before removing to a cooling rack.
