Earl grey oatmeal with honey broiled grapefruit is a delicious, healthy breakfast to start your day! (gluten-free, vegetarian, dairy-free option)

1 cup water
1 cup milk of choice
2 earl grey tea bags, or equivalent in loose earl grey tea
1 cup old fashioned rolled oats
1 tsp honey
1 large pink grapefruit
2 tbsp sliced almonds
Extra honey, for topping
Place oven rack 3-4 inches under the broiler and heat broiler to high.
Using a paring knife, remove peel from outside of grapefruit and remove segments from the inner membranes. Place on a baking sheet lined with foil, parchment, or a silicone baking mat. Drizzle grapefruit with honey. Spread almonds in a single layer on the baking sheet (in an area away from the grapefruit).
Broil until honey starts to bubble and is slightly browned, and almonds are toasted, about 5 minutes.
In a small saucepan, bring water and milk to a gentle boil over low heat with tea submerged in the liquid. Let the mixture simmer gently for about 5 minutes before removing the tea.
Add the oats and cook, stirring, over low heat until oats have absorbed all of the liquid, about 5 minutes.
Spoon oatmeal into two bowls. Top each with grapefruit and almonds. Drizzle with extra honey, if you’d like.
