Earl grey oatmeal with honey broiled grapefruit is a delicious, healthy breakfast to start your day! (gluten-free, vegetarian, dairy-free option)

Ingredients

Scale
  • 1 cup water
  • 1 cup milk of choice
  • 2 earl grey tea bags, or equivalent in loose earl grey tea
  • 1 cup old fashioned rolled oats
  • 1 tsp honey
  • 1 large pink grapefruit
  • 2 tbsp sliced almonds
  • Extra honey, for topping

Instructions

  1. Spread almonds on a baking sheet and toast for 5-10 minutes at 400°F. Remove from oven and set aside.
  2. Move oven rack to 3-4 inches under the broiler.
  3. Using a paring knife, remove peel from outside of grapefruit and remove segments from the inner membranes. Place in a glass baking dish and drizzle grapefruit with honey. Broil on high for 5-10 minutes, watching closely.
  4. In a small saucepan, bring water and milk to a gentle boil over low heat with tea submerged in the liquid. Let the mixture simmer gently for about 5 minutes before removing the tea.
  5. Add the oats and cook, stirring, over low heat until oats have absorbed all of the liquid, about 5 minutes.
  6. Spoon oatmeal into two bowls. Top each with grapefruit and almonds. Drizzle with extra honey.

Notes

  • Grapefruit tastes best when it is segmented correctly. Use this tutorial to learn how.
  • When heating the milk, heat it gently without bringing to a rolling boil to avoid scalding the milk.
  • Store leftover oatmeal in the refrigerator in an airtight container up to 3 days.
