2 earl grey tea bags, or equivalent in loose earl grey tea
1 cup old fashioned rolled oats
1 tsp honey
1 large pink grapefruit
2 tbsp sliced almonds
Extra honey, for topping
Instructions
Spread almonds on a baking sheet and toast for 5-10 minutes at 400°F. Remove from oven and set aside.
Move oven rack to 3-4 inches under the broiler.
Using a paring knife, remove peel from outside of grapefruit and remove segments from the inner membranes. Place in a glass baking dish and drizzle grapefruit with honey. Broil on high for 5-10 minutes, watching closely.
In a small saucepan, bring water and milk to a gentle boil over low heat with tea submerged in the liquid. Let the mixture simmer gently for about 5 minutes before removing the tea.
Add the oats and cook, stirring, over low heat until oats have absorbed all of the liquid, about 5 minutes.
Spoon oatmeal into two bowls. Top each with grapefruit and almonds. Drizzle with extra honey.
