Chunky Vegan Coconut Tahini Granola

Both healthy and delicious, this chunky coconut tahini granola with big, crunchy clusters and a slightly sweet flavor is perfect for topping yogurt or snacking on by the handful! With only 6 simple ingredients, it's super easy to make. (vegan, gluten-free)

Ingredients

  • 2 cups rolled oats
  • 1/2 cup unsweetened shredded or flaked coconut
  • 1/3 cup crispy brown rice cereal
  • 1/4 tsp sea salt
  • 1/4 cup pure maple syrup
  • 1/4 cup tahini
  • 1 tbsp coconut oil, melted

Instructions

  1. Heat oven to 350° F. Line a baking sheet with parchment or a silicone baking mat.
  2. In a medium bowl, stir together oats, coconut, rice cereal and salt.
  3. Add remaining ingredients and stir until combined.
  4. Pour onto your prepared baking sheet and spread in a single layer, but not too thinly. You want to have no spots of parchment showing through so that you get chunky clusters.
  5. Bake granola 10-15 minutes WITHOUT stirring, or until the edges are just golden. Remove from the oven and let cool  for at least 10 minutes (still don't stir).
  6. Once cooled, break the granola up into pieces.

Notes

  • If you're gluten-free, make sure to verify that your brown rice cereal is gluten-free. (It all should be, but some brands might be processed near wheat containing products.) Nature's Path and One Degree both make gluten-free versions.
  • Store granola in an airtight container at room temperature for up to a week.
