Caramelized onion guacamole

Take guacamole to a new level with this savory caramelized onion guacamole! It's the perfect appetizer to go with any Mexican dish! (vegan, gluten-free, nut-free)

Ingredients

  • 2 tsp avocado or olive oil
  • 1/4 small yellow onion, diced
  • 2 small avocados
  • Juice from 1/2 lime
  • Pinch salt
  • Pinch garlic powder

Instructions

  1. In a small nonstick skillet, heat oil over low heat. Add onions and cook on lowest setting, stirring, until onions are caramelized, about 20 minutes.
  2. Cut avocados in half lengthwise and remove pits. Scoop flesh onto a small plate. Squeeze lime juice over avocados and sprinkle with salt and garlic powder. Use a fork to mash avocados.
  3. Once onions are done, let cool to room temperature, then stir into mashed avocado.
  4. Stir in any other toppings you'd like, such as jalapeno, cilantro, or tomatoes.
  5. Serve immediately, or press a sheet of plastic wrap on top and refrigerate until ready to serve, up to 3 hours.
