Miso Caramel Apple Waffles

Use my miso caramel sauce (or any caramel sauce) in these healthyish miso caramel apple waffles. Fluffy whole grain apple waffles topped with a gooey caramel apple topping are calling your name this weekend!

For the Waffles:

  • 1 cup white whole wheat flour
  • 1 tbsp cornstarch
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1 large egg
  • 1 tbsp butter, melted
  • 1 1/4 cups buttermilk
  • 1 medium apple, any variety, grated

For Caramel Apple Topping:

  • 1 medium apple, any variety, diced
  • 2 tbsp water
  • 1/4 cup miso caramel (or any caramel sauce)
  • Pinch salt (if your caramel is not salted)

Instructions

  1. In a large bowl, whisk flour, cornstarch, baking powder, baking soda, salt and cinnamon.
  2. Add egg, butter and  buttermilk. Stir until just combined.
  3. Stir in grated apple.
  4. Heat waffle iron and spray or brush with oil, if needed. Scoop about 3/4 cup batter into waffle iron and cook according to manufacturer's instructions.
  5. Repeat with remaining batter.
  6. Meanwhile, make caramel apple topping. In a small saucepan, heat diced apple and water, covered, over low heat, stirring occasionally, until apples are softened, about 10 minutes. Stir in caramel sauce and salt (if using) and continue cooking until just heated through.
  7. Top waffles with apple topping.

Notes

  • If you don't have buttermilk, you can make 'soured milk' by adding 1 tbsp white vinegar to a measuring cup, then adding enough milk to reach the 1 1/4 cup line. Stir and let sit for a few minutes before using.
  • If you don't have caramel, you can either make homemade caramel sauce, or make a quick substitute for the topping. Heat 1 tbsp butter in a saucepan, add the diced apples and sauté for about 5 minutes, then add 2-3 tbsp honey. Simmer uncovered for 5-10 minutes or until bubbly. Stir in the salt.
  • All purpose flour may be used in place of whole wheat flour.
  • Store leftover waffles in the refrigerator or in the freezer in a freezer-safe container. Reheat in the toaster or in the oven at 400°F.
