Berry Avocado Kale Salad

Bursting with lots of berries and creamy avocado, this fresh berry avocado kale salad is a delicious and healthy summer side dish that's make ahead friendly! (gluten-free, nut-free, vegetarian)

Ingredients

Scale
  • 4 cups kale, chopped
  • 1/2 cup blackberries
  • 1/2 cup raspberries
  • 1/3 cup blueberries
  • 3/4 cup strawberries, hulled and halved
  • 1/2 avocado, diced
  • 1/3 cup crumbled feta cheese
  • 1/4 to 1/2 cup Orange Poppy Seed Dressing

Instructions

  1. Wash and finely chop kale. Drizzle with olive oil and add a pinch of salt. Using your hands, massage the kale until it softens up a little bit.
  2. Add berries, avocado and feta. Add dressing to taste and gently toss to coat.
  3. Refrigerate, covered, until ready to serve.

Notes

  • Don't skip massaging the kale. It's essential for kale that's more tender and less bitter!
  • This salad is also good with balsamic vinaigrette or a sweet vinaigrette such as blush wine or raspberry vinaigrette.
  • This salad is easily doubled or tripled for a crowd.
  • To make ahead, toss together all ingredients except for avocado and cover, refrigerated, until ready to serve. Add avocado just before serving.
  • If you're making ahead, you may need to add a little bit more dressing just before serving since the kale tends to absorb some of it as it sits.
