Easy Watermelon Feta Mint Salad

 This super simple watermelon feta mint salad is refreshing, healthy, and easy to make at a moment's notice - the perfect summer side dish for all of your cookouts this summer! (gluten-free, vegetarian)

Ingredients

  • 3 cups seedless watermelon, cubed
  • 1/2 cup feta cheese crumbles
  • about 10 mint leaves, roughly torn
  • Black pepper and sea salt to taste
  • Olive oil

Instructions

  1. In a large bowl, lightly toss watermelon with feta and mint.
  2. Transfer to serving platter and drizzle lightly with olive oil. Sprinkle with freshly cracked black pepper and coarse sea salt to taste.

Notes

  • Optional extras for more flavor: balsamic vinegar, red onion or pickled onions, avocado
