Toasted Cranberry Brie Turkey Sandwich

This simple and delicious cranberry brie turkey sandwich is a great way to use up those Thanksgiving leftovers for an easy 10 minute lunch!

Ingredients

  • 4 slices your favorite whole grain or sourdough bread
  • 2 oz brie, thinly sliced
  • 8 oz sliced turkey
  • 1/4 cup cranberry sauce
  • 1/2 cup baby spinach

Instructions

  1. Heat the turkey in a skillet until warm (but don't over-do it or it will be dry.)
  2. On one piece of bread, spread cranberry sauce. On the other piece, place the sliced brie.
  3. Top the cranberry side with spinach and top the brie side with the warmed turkey.
  4. Place the sandwich in a skillet with a dab of melted butter or olive oil and cook on low heat until golden, then flip and repeat until the other side is golden.
  5. Repeat with remaining ingredients for the other sandwich.

Notes

  • I like to spread some dijon mustard on the bread with the brie before cooking sometimes. It's delicious!
  • Throw anything else you'd like on this sandwich. My husband always says it need stuffing. You do you.
  • Don't like brie? Use another cheese. Or don't use any cheese. But melted cheese on a sandwich is really the only way to go.
