Strawberry Basil Goat Cheese Burgers

Change up burger night this summer with a sweet and tangy strawberry basil goat cheese burger. It's unexpected but delicious!

Ingredients

  • 1 lb ground beef (I like 85/15 for burgers)
  • 2 tbsp balsamic vinegar, divided
  • kosher salt
  • freshly cracked black pepper
  • 2 cups arugula
  • 1 tsp olive oil
  • 4 brioche buns (or whole grain buns)
  • 1/2 cup soft goat cheese, crumbled
  • 1 cup strawberries, sliced
  • handful fresh basil leaves, roughly torn

Instructions

  1. Make the burger patties. In a large bowl, mix ground beef with 2 tsp of the balsamic vinegar. Form into 4 patties, handling as little as possible. Generously season both sides with salt and pepper.
  2. Heat grill to medium heat. Grill burgers 8-10 minutes over direct heat, flipping once halfway through, until burgers are done. The internal temperature should reach 160°F. 
  3. In a small bowl toss arugula with remaining balsamic vinegar and olive oil. 
  4. Assemble burgers. Top bottom bun with burger patty. Add goat cheese, sliced strawberries, a few torn basil leaves and arugula. Top with the top bun. Serve immediately.
