Spanish Rice with Ground Beef

Super tasty Spanish rice with ground beef. Super easy and meal prep friendly.

Ingredients

  • 10 oz ground beef

  • ½ red bell pepper

  • 1 italian green pepper 

  • 1 onion 

  • 2 garlic cloves

  • a bunch of fresh cilantro

  • 2 cups white rice

  • 2 tablespoons tomato paste

  • 2 tablespoons olive oil 

  • 2 teaspoons salt

  • 1 teaspoon cumin 

  • 1 teaspoon black pepper

  • ½ teaspoon chili flakes

  • 1 teaspoon oregano

  • 4 cups water

Instructions

  1. Start by prepping all the veggies. For this dice the peppers and onion finely. Smash or mince the garlic cloves. Set aside. 

  2. In a medium-sized pan add a bit of olive oil and add the veggies. Cook for 10 minutes until they get soft and fragrant. 

  3. Add a bit more olive oil if needed and cook the ground beef with the veggies still in the pan. Season with salt, oregano, and chili flakes. Cook until it gets browned, making sure to break any lumps it might form. 

  4. Add the rice to the pan, as also the tomato paste and a bit of chopped cilantro. Mix well to distribute all the flavors and coat every grain of rice. 

  5. Add water to the pan and mix everything well. Cook on medium heat until all the water has been absorbed. Do not mix while the rice is cooking. 

  6. Serve with more cilantro on top. 

Notes

You can substitute the water for vegetable or beef stock for an even tastier dish. 

Make sure to not mix the rice while its cooking, otherwise it will release its starches and will turn mushy. 

Depending on your type of rice it might need a bit more water, so feel free to add a bit more if needed. Also you can cover the pan and let it rest for 10 minutes so the rice will continue to cook. 

Store any leftovers in sealed containers for up to 5 days.
