1/2 inch piece fresh turmeric, peeled (or 1 tsp ground)
1/2 inch piece fresh ginger, peeled (or 1 tsp ground)
1/4 cup water
1 tsp honey (optional)
Peel skin from cooled beet. Add to a high powered blender, such as a Vitamix or Nutribullet, with remaining ingredients. Blend until smooth. Add additional water to reach your desired consistency, if you’d like.
Pour in a glass and enjoy!
*Cook a batch of beets and leave in the refrigerator overnight for the easiest prep.
