Pear Collins Cocktail

- 2 oz pear puree (recipe below)
- Club soda or sparkling water
- Fresh thyme, for garnish
For Pear Puree:
- 1 medium pear, peeled, cored and diced
- 1 tbsp lemon juice
- 1 tbsp honey
- 2 tbsp water
To make pear puree:
- Heat all ingredients in a small saucepan over low heat, stirring occasionally. Simmer until pears are softened, about 10 minutes. Add more water if needed to prevent the pears from sticking.
- Remove from heat and let cool. Blend in a blender or food processor. Store in the refrigerator until ready to use.
- This recipe makes enough for 2-3 cocktails, so feel free to double the recipe if needed.
To make a cocktail:
- Place gin and pear puree in a shaker with ice cubes and shake to combine.
- Strain into a highball glass filled with ice.
- Top with soda or sparkling water and garnish with 1-2 fresh thyme sprigs.
Notes
- Pear puree can be made in advance and stored in the refrigerator for up to 4 days.
- In a pinch, you can use pear butter for the pear puree.
