Peach Avocado Caprese Salad

This peach avocado caprese salad combines all the best of summer produce - tomatoes, peaches, avocado and basil with fresh mozzarella for a loaded version of the classic summer caprese. (gluten-free, nut-free, vegetarian)


  • 1 large ripe tomato
  • 1 ripe peach
  • 1 small ripe avocado
  • 1/2 cup cherry tomatoes (optional)
  • 1/2 cup fresh mozzarella (I like the pearls so there's no cutting involved!)
  • 1/4 cup fresh basil leaves
  • 2 tbsp good quality olive oil
  • 2 tbsp white balsamic vinegar
  • Coarse sea salt
  • Freshly cracked black pepper


  1. Thinly slice tomato, peach and avocado. Half cherry tomatoes if using. Arrange on a serving platter.
  2. Top with fresh basil and mozzarella pearls.
  3. Drizzle with olive oil and balsamic vinegar. Sprinkle with salt and pepper to taste and serve immediately.


  • This salad is best served right away, but leftovers will keep for 1-2 days in the refrigerator.
