Healthy Gluten-Free Oatmeal Waffles
These light and fluffy gluten-free oatmeal waffles are a healthy breakfast treat that’s easy to whip up in the blender. Perfect for weekend mornings or to prep ahead and freeze! (gluten-free, nut-free, dairy-free option)

Method: blender and waffle iron
1x 2x 3x Ingredients
1 1/2 cups rolled oats
3 tbsp cornstarch
1 tbsp brown sugar
2 tsp baking powder
1/4 tsp salt
1 tbsp butter, melted and cooled slightly*
1 1/2 tsp vanilla
1 cup club soda Oil spray
Add all ingredients to a blender and blend until smooth.
Spray waffle iron with oil.
Scoop batter into prepared waffle iron and cook according to manufacturer’s instructions.
Top with fruit, maple syrup, or any other toppings!
*Use oil of choice for dairy-free.
