No Bake Lemon Poppy Seed Snack Balls

These healthy, no bake lemon poppy seed snack balls are the perfect make-ahead snack to help you power through your day. With their bright, cheery flavor, simple ingredients, and no added sugar, they'll help you beat that afternoon slump for sure! (gluten-free, vegan)

Ingredients

  • 1/2 cup pitted dates
  • 1/2 cup almond flour
  • 1 cup rolled oats (specified gluten-free if necessary)
  • 1/4 cup lemon juice (from 2 lemons)
  • 2 tsp lemon zest
  • 1 tsp almond extract
  • 2 tsp poppy seeds
  • 2 tbsp water, or as needed

Instructions

  1. Place all ingredients except for water in a food processor. Blend until dates are very finely chopped and a smooth 'dough' comes together. If it is too dry, add water, one tbsp at a time, until it's just moist enough to form a ball.
  2. Scoop dough by the tablespoon and roll into balls.
  3. Store in an airtight container in the refrigerator or freezer.

Notes

  • If your dates feel dry, soak them in hot water for 10-15 minutes before draining them and adding them to the food processor.
  • You can lightly oil or wet your hands when rolling the balls to make it easier.
