Marinated Artichoke Salad with Tomatoes and Feta

This easy marinated artichoke salad with canned artichoke hearts, tomatoes, feta, herbs, and an easy homemade dressing is simple, fresh and delicious! (vegetarian, gluten-free)


  • 1 (15 oz) can artichoke heart quarters, drained
  • 1 pint cherry tomatoes
  • 1 large clove garlic
  • 1/4 tsp sea salt
  • Juice from 1/2 lemon
  • 2 tbsp red wine vinegar
  • 3 tbsp extra virgin olive oil
  • 2 tbsp chopped fresh basil
  • 2 tbsp chopped fresh oregano
  • Freshly cracked black pepper
  • 1/4 cup crumbled feta cheese


  1. In a small bowl, use a fork to mash garlic clove with salt until a paste is formed. Whisk in lemon juice, vinegar and olive oil.
  2. Place artichoke hearts in a bowl with tomatoes. Pour vinaigrette over tomatoes and artichokes. Add basil and oregano. Season with pepper to taste. Add feta and gently stir to coat.
  3. Place salad in the refrigerator, covered, to marinate for 2-3 hours before serving, stirring occasionally.


  • Store marinated salad in the refrigerator in an airtight container for up to 3 days.
  • Feel free to add any other herbs you like. Though I like fresh best, you can use 2 tsp each of dried basil and oregano.
  • Leave out the feta for dairy-free.
