- Method: no bake
- Cuisine: Greek
- 1 cup hummus (I like roasted garlic or roasted red pepper flavors)
- 1 cups plain Greek yogurt
- 2 tbsp fresh dill, chopped
- Juice of 1 lemon
- 1 medium tomato, diced
- 1/2 large cucumber, diced (about 1 cup)
- 1/4 cup black or kalamata olives, pitted and sliced
- 1/4 cup crumbled feta cheese
- 1/4 cup fresh herbs (I used parsley and dill), chopped, for topping
- In a small bowl, stir together yogurt, lemon juice, and dill.
- Spread hummus in the bottom of a square 8 inch or similar sized serving dish.
- Spread yogurt mixture evenly over hummus.
- Layer cucumbers, tomatoes, olives, feta, and chopped herbs over yogurt mixture.
- Refrigerate until ready to serve.
Notes
- Dip can be made a few hours in advance. Store covered in the refrigerator until you're ready to serve.
- To avoid watery dip, use whole milk Greek yogurt and English (or hothouse) cucumbers. If you're using regular cucumber, you may wish to scoop the seeds out and discard them, since the seed portion tends to get watery.
- If you already have prepared tzatziki sauce, you can use it in place of making the yogurt sauce.
