Healthy Banana Nut Granola

This healthy banana nut granola recipe is loaded with pecans, walnuts and cinnamon - just like your favorite banana nut bread. With no added sugar, it's not too sweet and makes a nutritious breakfast or snack. (gluten-free, dairy-free, vegan)

Ingredients

  • 2 cups rolled oats
  • 1/2 cup chopped pecans
  • 1/2 cup chopped walnuts
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tbsp ground flax seed
  • 1 ripe banana
  • 3 tbsp oil (I use avocado oil or melted coconut oil)
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 300°F. Line a baking sheet with parchment or a silicone baking mat.
  2. In a large bowl, mash the banana. Add oil and vanilla and whisk until combined.
  3. Stir in the oats, nuts, cinnamon, nutmeg, and flax until evenly coated.
  4. Pour onto prepared baking sheet and press evenly in a single, tight layer with little to no white space.
  5. Bake 25-30 minutes without stirring.
  6. Remove from oven and let cool before breaking into pieces.

Notes

  • Store granola in an airtight container at room temperature up to 1 week.
  • The more brown the banana, the sweeter it will be.
  • The key to big, chunky clusters is to NOT stir while the granola bakes or cools. Once it's cooled, you can break it up into pieces as big as you'd like.
