This refreshing grapefruit avocado salad with fennel and mint is a delicious side dish made with simple ingredients. Cool creamy avocado, crisp fennel and fresh mint add a depth of flavor to sweet-tart grapefruit in this gorgeous winter salad! (vegetarian, gluten-free, dairy-free, nut-free)

  • 2 WinterSweetz ruby red grapefruits
  • 1 large ripe avocado
  • 1 small fennel bulb
  • 1/4 cup fresh mint leaves
  • Good quality extra virgin olive oil
  • Honey
  • Coarse sea salt, to taste

Instructions

  1. Remove peels from grapefruits and cut into segments. (See this video for how to do so easily.)
  2. Peel and thinly slice the avocado.
  3. Thinly shave the fennel bulb. I use a mandoline.
  4. Roughly chop mint leaves.
  5. Arrange grapefruit segments, avocado slices, and fennel on a serving platter. Sprinkle with mint.
  6. Lightly drizzle with olive oil and honey. Sprinkle with salt.
  7. Serve immediately.
