Healthy Blackened Salmon Tacos with Pineapple Salsa

For Salmon:
- 1 lb salmon filet
- Juice of 1/2 lime
- 1-2 tbsp blackening seasoning
- 2 tsp avocado oil or other neutral flavored oil
For Pineapple Salsa:
- 1/4 cup red onion, diced
- 1/2 cup fresh pineapple, diced
- 1 small jalapeño, seeded and diced
- 2 tablespoons fresh cilantro leaves, roughly chopped
- Juice of 1/2 lime
For Tacos:
- 4-6 warmed corn tortillas
- 1 diced avocado
- Lime wedges
- Prepare the salsa. Dice onion, pineapple, jalapeño and cilantro. Add to a small bowl with lime juice and stir to combine.
- Use a thin filet knife (I LOVE this inexpensive one!) to remove skin from salmon. Squeeze lime over fish and rub both sides generously with blackening seasoning.
- Heat oil in a skillet over medium-high heat. Sear salmon, undisturbed, on both sides for 3-4 minutes per side, or until a crust forms. Lower heat and continue cooking until salmon is cooked through, 5-10 minutes, depending on thickness.
- While fish is cooking, warm the tortillas.
- Use a fork to flake salmon into large chunks. Serve with warm tortillas, pineapple salsa, avocado and lime wedges.
