Slow Cooker Balsamic Braised Short Ribs

Incredibly tender and flavorful slow cooker balsamic braised short ribs are easy to make yet delicious enough for a date night or dinner party! They’re cozy, comforting, cold-weather food at it’s finest. (gluten-free, dairy-free, nut-free)


  • About 1.5 lb beef short ribs
  • Kosher salt
  • Freshly cracked black pepper
  • 2 tsp olive oil
  • 1/2 yellow onion, sliced thinly
  • 2 cloves garlic
  • 1/4 cup balsamic vinegar
  • 2 tbsp worcestershire sauce
  • 1/2 cup beef broth
  • 2 sprigs thyme


  1. Liberally season short ribs with salt and pepper. Heat oil over high heat in a skillet. Sear short ribs until browned, about 2 minutes per side.
  2. Place onion slices and garlic in the bottom of the crock pot. Add short ribs, vinegar, worcestershire, broth, and thyme. Cook on low 4-6 hours.
  3. Optional: Remove ribs form crock pot and place on a baking sheet lined with foil. Place under the broiler for 3-5 minutes.
  4. Serve topped with a spoonful of liquid from the crock pot.
