Apricot White Chocolate Snack Balls

Apricot white chocolate snack balls are delicious, healthy snacks that are easy to prep ahead and grab as you need them. They're great for pregnant and nursing moms or for taking to work or school! (gluten-free, vegetarian)

Ingredients

  • 1 cup oats
  • 1/2 cup pitted medjool dates
  • 1/4 cup cashew butter
  • 2 tbsp flax seeds
  • Up to 1/4 cup cold water
  • 1/2 cup dried apricots
  • 1/4 cup white chips

Instructions

  1. Place oats in a food processor and pulse until they are finely ground. Add dates, cashew butter and flaxseed. Pulse, adding water 1 tbsp at a time, until 'dough' forms into a ball.
  2. Chop apricots into small chunks. Add apricots and white chips to dough and stir or briefly pulse to combine.
  3. Scoop mixture (I use a small cookie dough scoop) and roll into 1-inch balls.
  4. Store in an airtight container in the refrigerator or freezer.
